Contaminants - It all Depends on the Origin
Environmental contaminants are ubiquitous and mainly due to industrialisation. The stable substances accumulate in the food chain and thus lead to contamination of food. Dioxins, polychlorinated biphenyls (PCB) and polycyclic aromatic hydrocarbons (PAH) are considered persistent environmental toxins. Therefore maximum limits for contaminations in food were issued by the EU in the regulations 1881/2006 and the regulation for contaminants.
